Cooking time: 5 minutes

This simple sauce is served with pasta, with a knob of fresh butter and grated parmesan.

Ingredients
  • 6 fully ripe tomatoes
  • 4 tbsp extra virgin olive oil
  • 2 sage leaves
  • 1 tbsp balsamic vinegar
  • salt
How to cook it...
  1. Blanche and skin the tomatoes, mash the flash with a fork and allow to drain. Then place in a casserole with the olive oil and sage leaves and simmer for 10-15 minutes.
  2. Remove the pan from the heat, remove the sage, mix in balsamic vinegar, and season with salt

You can use this salsa as a basis for just about any Italian sauce, dip or pizza topping. Just mix in in with fresh or cooked vegetables and meat, add a grind of pepper, and simmer for moment...
