This
simple sauce is served with pasta, with a knob of fresh butter and grated
parmesan.
Ingredients
- 6
fully ripe tomatoes
- 4
tbsp extra virgin olive oil
- 2
sage leaves
- 1
tbsp balsamic vinegar
- salt
How
to cook it...
- Blanche
and skin the tomatoes, mash the flash with a fork and allow to drain.
Then place in a casserole with the olive oil and sage leaves and simmer
for 10-15 minutes.
- Remove
the pan from the heat, remove the sage, mix in balsamic vinegar, and
season with salt.
